This week I am freezing tomatoes & peppers. I wash the tomatoes.
Drop into hot water then drop into ice water.
The peeling will slid right off. I quarter each tomato - place on a cookie sheet to freeze - then place in a sealed bag.
Frozen tomatoes work great for soups, stews, sauces, and sauted.
The peppers I wash then slice. I then place the slices in a sealed bag and freeze. They work great for sauteing. We love sauteed peppers with
Italian Sausages. I also use them in my meals that require me to saute the peppers.
They are very handy in a gallon sealed bag. I just open the bag - take out a hand full and reseal the bag!
