Leftover Rotisserie Chicken Soup

You will need......
1 Rotisserie Carcass with meat on it
Chicken Broth ~ 6 cups
One onion chopped
Small bag of fresh baby carrots
4 Celery Stalks peeled and chopped
8 small Potatoes - diced
Frozen Okra approx. 1/2 bag
Fresh Basil Chopped
Garlic to taste
Seasoned Pepper to taste
Lawry's Seasoning to taste
Salt & Pepper to taste
Olive Oil

I use a cast iron porcelain stock pot to make my soup. In the pot saute onions in olive oil until clear.   Add all ingredients to the sauted onions.  

Cook on medium high until soups boils..then turn down to low and let soup simmer for approx. 2 hours.  The chicken will fall off the carcass.  When the veggies are done...soup is done!

I make egg noodles ~ I do not add them to the soup.  I place egg noodles in my bowl and then add the soup on top of the noodles.

Delicious  ~ tummy warmer for cold winter nights.

  1. Hi ! Thank you for this awesome recipe! I was wondering how it would taste with linguine, would you recommend it? And would it be enough for 6 people, in the servings it says 6 but under it it says 4 as well. Thank you so much!
