Getting back on track to living healthy......

If you are like me....during the holidays I totally get off track being healthy.  October to January are my hardest months to eat right.  I snack and eat way too much food.

Now that it is January - time to get going!  

Here are a few easy ways that I lost 40 pounds last January - April:
  • Lots of fruit - I keep fruit in the house all the time. Anytime I needed a snack I snacked on fruit
  • Smaller portions - I use a smaller plate.  Amazing the tricks your mind can play on you when you think your plate is full.
  • Veggie Soup - Each week I would make homemade Veggie Soup.  I ate my soup for lunch
  • Portion control - whatever I bought when I got home I would immediately put it into portion packs. If a box of crackers has 10 serving - I would fill 10 baggies with crackers.  I was making my own 100 calorie snack packs (much cheaper than buying them in single serving bags)
  • Planned snacks - 100 calorie popcorn - 80 calorie Yogurt - each night at 8pm I treated myself to a snack
  • I make Steel Cut Oatmeal in the crockpot and portion size it for easy serving in the AM.  Good for you and lower in calories
  • Egg Beaters taste delicious in the morning! 
  • Be Calorie Aware!  Watch what you eat and when.  With so many can find a healthy substitute for almost any craving!  Be Creative!
I for one am NOT a exercise bunny.  I have a hard time making myself exercise.  But I do like to clean. So each January I declutter my world.  Really clean out the entire house from top to bottom.  A room a week!  Amazing the muscles you use when you deep clean your home.  Plus, I am planning my walls to paint when the weather gets nicer in March. Spare bedroom - hallway - kitchen - then bathroom.  I have till March 1st to get every room decluttered. Then March Ist I start on painting. When painting is finished I am going to do Spring clean-up yard work.  I will be busy until Memorial Day....then it is pool time! :) 

Here is my Crock Pot Steel Cut Oatmeal Recipe!  Tasty and very good for you!

Crock Pot Oatmeal

1 1/2 Cup Water
1 1/2 cup Skim Milk
1 Cup Steel-Cut Oats
3 tablespoons of Brown Sugar
1 Tablespoon Flax Seed
1/4 Teaspoon Salt
2 Tablespoon of Butter
1 teaspoon Cinnamon
2 Apples - diced

Spray your crock pot with a non-stick spray! Very Very Important...Dawn failed to spray her's one time and it was like cement!  Seriously....SPRAY!  :)
I use a large slow cooker - add all ingredients into the slow cooker. Cook on low for approx. 7 hours
Makes approx. 7 servings  3/4 cups servings
Place unused cooked oatmeal in the fridge or freezer.  To heat it up add about 1/3 - 1/2 cup of Skim milk then heat approx. 1 minute in the microwave
Top your oatmeal with varies toppings....nuts or fruit...maple syrup...honey is also good added on top.

With my calculations I estimate approx. 150 calories per serving if made by recipe and no additional toppings added. If you add toppings you will need to increase calorie count depending on the various toppings.

  1. Great suggestions! I do exercise a lot, but my diet could use a lot of improvement. I've never tried steel cut oatmeal, but I think I might give your recipe a shot! :)
