Cranberry Orange Pecan Muffins
1 Cup Dried Cranberries
1/4 Cup of Orange Juice
1/2 Cup Butter - softened
1 Teaspoon Orange Zest
2/3 Cup Sugar
1/2 Cup Milk
2 Teaspoons of Baking powder
2 Cups Flour
1 Cup Chopped Pecans
Red Colored Sugar for top of Muffins
In a small sauce pan add 1/4 cup Orange Juice and 1 cup of dried Cranberries. Simmer over medium heat. Set aside to cool. Drain off any extra juice when ready to put into dough.
In a large mixer blend well sugar, orange zest, and butter. Add eggs one at a time. Gradually add milk to the mixture. By hand fold in cranberries and nuts.
Spoon into muffin pan - makes 12 muffins. I use Valentine's Day papers in my muffin pan. Sprinkle each muffin with Red Sugar
Bake 25 - 30 minutes at 375 degrees
